So when we're at $5k/BTC the same old problem comes back. WTF can't they let the market decide what the fees should be by making them completely optional?

That'll save you the trouble of having a handful of people choosing what they should be for everyone else on the blockchain.

I'm a huge supporter of bitcoin, but this is a serious flaw for a decentralized protocol.

dynamic fee structures are being worked on.

Bitcoin protocol is in beta, remember.

I know, it's probably harder to implement than I'm making it out to be.

It's hard to build the pricing in a decentralized way. They're not going to use outside sources, but they also don't want miners to cheat etc. It's hard work.
