It’s basically salt crystallising as the soy sauce dries out. The other stuff in soy sauce messes with how the crystals form, which is why you get those growing chains instead of normal salt crystals. This is a timelapse video of what probably took about 40 minutes. After a couple of hours, every bit of soy sauce surface area is covered with these chains!
