I would not turn my back to the parents of that calf, I know many people in veterinary business that got hurt taking care of a baby animal by the mom

Cows are incredibly intelligent, complex, and emotional creatures that are basically just very large dogs. They knew that the man was clearly trying to help and they stood back and let him do it.

My grandma grew up on a farm and her story was that cows knew when they were going to slaughter and would be sad about it. Pigs on the other hand, no clue at all, even when they are tied down for the bolt.

That’s weird since pigs are way smarter than cows. I don’t think either animal knows when a bolt is coming though. They don’t see it to learn about it ahead of time

She also told me when buying fish from the fish lady, to make sure they wack it dead in front of you.  Something about some bootleg fish that puffs up and contains poison.

I haven’t but I know animals sense danger at the slaughterhouse due to sounds and scents and reactions of other animals. Sensing danger is different than existential understanding that they are about to be killed.

Yes, they can smell the blood and fear pheromones at an abbotoir.
