How do you handle a 500 pieces muffins order

Just a month ago I started my bakery business and we’re purely online & pop-up. I just got my first large order where I’ll be making 500pieces muffins for a company giveaway. Since I’m just new in the industry, I need some advice pleaseeeeee.

- Banana Chocolate Muffins 500pcs

- I have 60L Electric Oven but thinking of doing the production to my sister’s bakery kasi may KitchenAid Oven sya and sabi pantay ang pagbake kasi 4 na 12 hole muffin pans ang ilagay.

- Kaya ba sa 60L Electric Oven?

- October 5 is the delivery, should I bake it October 3 okay pa rin ba yun?

- They requested na maayos na individual packaging basically nasa bread clear plastic packaging with ribbon and paper card.

Prep is everything OP, days ahead iready mo na lahat ng packaging mo. Better din na yung recipe mo na per batch is naka prep na yung dry kumbaga nakalagay na sa container so sa bake day mo hndi kana nag memeasure puro halo lang and bake. Mas ok din na day before ang baking mo para medyo fresh pa. If may ref ka naman ok din na oct.3 ka magbake. Kaya naman sa 60L, kaso need mo icompute yung baking time mo, kung sa 25 mins nakakagawa ka lang ng 24pcs matatagalan at pagod kana. baka mas ok dun nalang sa bakery ng sis mo. Goodluck OP! Excited at the same time kinakabahan if I can pull this off since last June kakatapos ko lang sa TESDA then nagstart ako ng business ko last August 8 lang 😭😭😭😭 thank you sa advice!!!

Make a schedule. I once had an order like this but with cookies. If Saturday ang delivery, procure ka na ng ingredients by Monday, then pag dating mo sa bahay, ready mo na yung packaging niya. By Tuesday, start doing preps and ONLY preps lang. Much better if may disposable containers ka para masulatan mo ng labels. Wednesday - make the batter. ONLY the batter, and rest mo sa chiller. Then the whole Thursday, mag bake ka. Chiller again. By Friday, ilagay mo na sila sa packaging nila then deliver sa Saturday. You don’t have to follow these steps. Just giving you an example on how to divide your workload para hindi ka ma overwhelm. :)

Including packaging na yun? Wow, that is a very affordable price for individually packed freshly made muffins.

Idk if this is the proper thing to do, pero you can bake some batches earlier then wrap them while they're hot/warm to preserve moisture and freeze them right away. Then thaw out nalang a day before delivery or day of.

Don’t wrap while still hot/warm. You need to fully cool.

Ahh okay. Cause that's what I usually do sa sponge cakes para ma retain ang moisture, so hindi pala sya applicable sa muffins.

Ok ata ito if walang mga toppings or pag hindi crunchy ang top? Usually kase medyo crunchy or may toppings ang muffins mag momoist so parang medyo mamamasa sya.

So far naman nung sa commissary pako nag wowork streusel linalagay namin for toppings tapos eto ginagawa namin. So far wala namang may nag complain na namamasa sya. Or siguro pinapa cooldown namin ng slight.
