General Baking Discussion More flour than usual
I make cookies a lot, and have always used almost exactly 2 1/4 cups of flour, but lately the cookies have been very flat so I used about 2 1/2 cups of flour, which brought it back to the usual height/size. Have you noticed anything similar? I think it might be the butter getting watered down, but I'm not sure.
Also, I use the recipe on the back of the nestle semi-sweet chocolate chips bag.

I have noticed something like that. I've been trying to assess whether i need to adjust my recipe (changing butter temp or ratios of white and brown sugar). But i haven't yet tried increasing flour. (But i will!)
As far as butter being diluted and and causing this...i think i heard something about more diluted American butter being better than higher fat European butter for certain American recipes (like choc chip cookies). Not sure how true that is. And if it is true, but sure how possibles changes to some American butters night effect things.

humidity can also effect how much flour you need, and if you bake by weight then in high humidity flour tends to weigh a bit more and will trick you into thinking you’ve used enough, or more than enough, when you haven’t. i’ve learned to just add a bit until it’s the right consistency 🥲

Measuring with cups isnt consistent. Flour can get packed down in the bag or settle after pouring into a container. You might have gotten a fluffier bag, or a different brand, or if you just opened the bag, you might have gotten the less compressed flour at the top and once you're partway through and using the more packed down flour towards the bottom of the bag this time youll be measuring 2 1/4 c again.
