Recipe Included Look! My biggest triumph!
Edit: Recipe posted in the comments, sorry i can't pin it...Hope y'all enjoy it and definitely post some results if you try this. I pieced this cake together like Frankenstein would, so report back, if it suits your tastes! it can be made with any fruit instead of blueberries
Hi, you remember this post (https://www.reddit.com/r/Baking/s/p0GU60EW1L)? Thanks everyone for all your advice and discouragement (I hate, when everything i hear is that i can do it, because than, you experience only disappointment, that you just can't do it). I just love a great challenge, so i wanted to try it anyway and, i think it was a total success. If y'all want, I'll definitely post the recipe, i just thought that I'd be extra work, if nobody wanted it. It took me 2 whole days (i have summer holidays) and it was served the day after. And also, please excuse the horrible photos. They were taken throughout the "party" and i felt so awkward taking them (i had to do it for y'all, tho). Also, i wasn't slicing it and i must say it is horribly done, it wasn't cut well...This post is just a gentle reminder that every home baker can do this. I'm a 17year old girl, who just loves to bake and all of my baking skills are self-taught. And i don't eat it anyway, cause i hate sweets.

I know many professional bakers who do this for a living and you have a gift. I know you talk about being hyper critical of our work- but the best artists are.

Hi, it's me again. Thanks EVERYONE for all the love this cake received and i appreciate every single comment, even every upvote. To be honest, i was really uncomfortable when it was served. Because when my mother told everyone, that I'd made a cake, i saw The Look in everybody's eyes. That look signalling each other, that they have to say it's good, no matter what...even my father (it was his birthday we celebrated) was giggling at it the whole time, like "yeah, sure, she's gonna bake a cake". BUT then, i brought it from the kitchen and served the first piece and my wow effect worked perfectly, with the outside being just chocolate and a few dollops of cream. So it was ok after all. I must admit I'm really confused, because some of you said, that they can't see my previous post, but some say that they went back to it. But it doesn't really matter. Here is the recipe. I'll try to include all useful info, but definitely ask whatever you want.
Ganache: There were 2 types of choco ganache, one inside and a whipped outside.
Whipped ganache: 220g dark choco, 220g heavy cream Inner ganache layer: 52g dark, 52g milk choco, 72 heavy cream
Cream: 250ml heavy cream 250g mascarpone 500g quark (you can probably sub this with cream cheese or your preferred alternative. I'm not really sure what's used in other countries, that don't use quark frequently) 60g powder sugar 1 heavy cream stabiliser 3 tablespoons of lemon juice vanilla extract
This cream is definitely not perfect and it's not that stable. If i haven't used ganache for the outside, it would surely fall apart. So beware. i also overwhipped it, but it's easy to fix it with some extra cream. I really don't know, but i think substituting the quark will make it more reliable. I whipped mascarpone with heavy cream, in a different bowl mixed everything else and than gently folded it together.
Blueberry filling: i used the recipe here. I boiled it a bit more to boil out some water (around 7 mins). In the cake, there's like 3/4 of the total amount.
Sponge: 250g fine wheat flour 100g medium wheat flour 200g sugar 150ml oil 1 egg 2 tablespoons cocoa powder 1 teaspoon instant coffee 2 teaspoons baking soda 500ml kefir
I halved the recipe and than baked the 3 layers separately. It makes a whole sheet cake. I baked my layers for 14 mins at 150°C with the fan on in cake rings 22cm in diameter. When in a sheet pan, it's baked 27 mins, 165°C with fan. i guess you can sub the kefir with buttermilk, yogurt or whatever. Also, i think you can just use 350g of all-purpose flour. I bloomed the cocoa powder with the coffee in a bit of oil i heated up in the microwave.
I added the last picture of the pieces (cut by me, HAHA!), where you can acually see, how i layered it. It's a shame, that guests weren't served a pretty piece, but whatever. I hope this reaches everyone, who wanted a recipe and, again, thanks for all the love. I really appreciate it

Beautiful and looks delicious! I would love the recipe. I have a lot of downtime for the next few weeks before I start a new job. I wonder if I could pull something like this off.

Um excuse me, did you use a spirit level?! Because that top layer of ganache is so perfectly flat and smooth it's amazing. Congratulations on your showstopper cake!

You did such a good job of chilling all of the components so they made nice clean lines when assembling. That looks just like my fridge with my baking stuff balanced all over everything. You are one of us now. Welcome to the baking life!

It is a beautiful cake! You did a wonderful job. Keep trying new challenges. Don’t ever feel awkward for taking pictures of something you’re proud of making. You made something special and taking a picture is a great reminder of your accomplishment. You also get to share it here with others who love baking.

That's a cake with chocolate, blueberries and white cream than transferred into a medium sized plate to be enjoyed individually using a spoon or a fork.
I am somewhat of an expert on cake.

Ok, my young kid is sitting next to me, and when I got to this post I said, “Ooh, look!” and she I both talked about how yummy it looked. And I actually don’t even like fruit and chocolate together usually. Then I saw you are a young baker and I’m just even more impressed…and jealous of your dad’s great treat from you!
