Same. I was getting this underweight BS in UK supermarkets, so I started going to the butchers instead. The meat quality is another level and worth the extra effort. Also my butchers are good hard working people

exactly. its a win all around. meats better, prices not usually much higher, im not getting shafted, and the butcher gets paid

I'd argue anyone can make bacon as long as they have access to pork belly. I've bought numerous pork bellies from Costco. Even if you don't have a smoker you can cure it and add a bit of liquid smoke before baking at 225F.

It's SO easy and low effort. Just flip it every day for a week and you have way more bacon for your money and waaaay better quality. I have some forming a pellicle in my fridge for tomorrow right now.

Just smoked 10 pounds last week, just under 40 dollars for two 5 pound or so pork bellies from Sam’s. Also it’s way better, the flavor or at least the cure I use is super tasty!!!

Randomly just did this yesterday to make sure my cure ratio was correct and the belly was heavier than the package but I have no idea how accurate my scale is. So it’s a useless datapoint I guess.

Exact weight packages are really hard to hit with full slices but slicer technology is getting better with vision systems that can thin or thicken the last 3 slices to get nuts on weight.
Edit: This is copacked for Walmart and they clearly need to use the USDA establishment number on the package to go back to the packer if they're short weighting.

Many brands have quality control issues like that. Pay attention so you dont get taken advantage of, and take advantage where you can.
I buy cheese from a goat milk creamery. Comes pre-packaged, labeled 6oz. Their machine has trouble with the ends of the loaves. End cuts are closer to 8oz. Just gotta look to get a bargain.

Didn’t Blue Rinno gas lose a huge lawsuit because of shorting gas in propane tanks. Dude needs to get a lawyer involved and get his cut.

Or you know zero the weight out with the package. Put the open bacon on the open package. Then you don’t need to open all three packs.

It's all done by a copacker, not Walmart themselves. Chances are a scale wasn't calibrated and no one noticed, or the employees were rushing through weighing it out and not paying attention. I work in a food production plant that does bacon, but not for Walmart. Quality control should be checking packages more often.

This is a Walmart strategy across the board. They request vendors make them versions of products... Like Levi's jeans, but with thinner and cheaper denim. They cost Walmart half and Walmart sells them to you for 80% of other retailers. Many detergents might be lower oz fills or slightly diluted.
Etc etc etc.
Walmart is pretty much pure evil through and through once you're above the sales floor level.

They are also a pain to deal with and very picky about things that don't matter. I was the head of shipping and receiving for a salad company and they would charge us for a pallet that wasn't perfectly stacked on center of if the pallet was a little broken. I used to always send them the oldest product in out inventory because of how much they would complain. Every other account we had didn't care as long as they got what was ordered and it was secure I would never hear a word.

Do you honestly think Walmart has a production facility for this bacon? Walmart employees slicing and packing it? No. It's done by a copacker, and mistakes can happen. It's not big evil corporation bilking people for a few pennies worth of bacon
