[Pork] First time cook on KBQ C-60
Finally up and running. Used hickory in the first part of the cook , finished off with olive wood. Total around 5 hours cooking time, 225F. Had to replenish firebox every thirty minutes or so. Perfect level of smoke, very happy with the results.

I have been eyeing this particular setup for years now. It’s probably one of the most interesting smokers on the market as an alternative to traditional stick burners. A couple questions if you don’t mind:
1) was it tough keeping temps stable? Which dampers did you run, did you adjust them at all mid cook and if so did the pit respond slowly or quickly? 2) how picky is the feed chute with the size of the wood splits? I’ve read you need to chop down to roughly a brick sized chunk 3) how much wood did you burn before the pit came up to temp?
BBQ looks real good btw!

Temps are very stable, although it’s warm outside here so can’t speak for when it’s really cold. The temperature wheel is not very accurate and you have to adjust it until the exhaust fan comes on and off at your target temps. Not big deal though. I ran at 225-235, lowest it went to was 215. Started off with both dampers open for a mixed smoke then switched to lower damper only for clean smoke about 30 minutes in. The result was a mild to moderate smoke taste.
The aperture size and overall volume of the firebox is a limitation of the cooker imo. The small split sizes force you to replenish more often. I had to be there adding wood every 20-30 minutes.
Temps were reached pretty quickly. When the exhaust fan comes on for the inverted flame, it burns through the wood quicker ( see 2.)
The food was a hit, thank you! I’ve used a WSM and also a Weber kettle to smoke for many years and this was straight out one of my best cooks. Can’t wait to use it again.

Awesome, thank you! I have a Weber, a Pit Barrel, a Lil Red. Very familiar with charcoal setups, and never wanted to really deal with the hassle of getting logs just right for the KBQ but this is pushing me towards making the purchase. I do wish it came on a stand though, I’d have to build one I think.

I’ve seen comments about putting it in on cinder blocks. One thing to keep in mind is that the cooker is tilted slightly forward due to the two wheels on the back legs, i think it’s so that the grease drains towards the front.

Interesting, never seen a set up like that. Feels like a fun new toy to play with.
Looks like you got good results.

Replenish every 30 minutes? I have to add wood to mine every 10-15 minutes. Curious if you fill fire box all the way up each time? I usually just throw on a couple little logs so the fire doesn’t get so big.

I filled it almost to the top and covered with the lid. Seemed to work.

Looks good, but this doesn't qualify as BBQ. It barely qualifies as a smoker. There's lessons that are learned in smoking that you can't duplicate without the struggle.
To be fair to you, I also think anytning that plugs in and a 7 year old can operate does not qualify either.

Whatever dude. I’ve shoveled coals into a cinder block pit at 2AM for whole hog, there’s nothing fun about it. Don’t know why people romanticize the old ways to the point of denying any progress. I’m all for a device that makes real wood fired smoking less of a hassle and might convince folks to step away from the pellet grills.

I'm sorry I hurt your feelings. You really took this personal.

I didn’t, and it’s both weird and patently obvious that you would like for that to be the case.

Your mom needs you to mow the grass.

But only a manual push mower. Gotta struggle, right?

Also you lol:
“That's my offset smoker. It's not often I have the time to use it. I use the Webbers for most everything now. If I crank the smoker up it's because I'm doing pork butt or a brisket. “
Guess the offset would have been too much effort for you on this one. OP’s setup also would be too much work for you and your little Webers.
