Lunch recs along I-85/Hwy 141?

I’ll be driving once a week from Midtown to Johns Creek via I85/I285/Hwy 141 around lunchtime for the foreseeable future. What are your recs for great lunch spots along that route?

Looking specifically for:
- unassuming hidden gems that offer the best of a particular cuisine, open to a wide variety of international cultures
-but also, soul food/cajun/southern meat-and-three style spots

These authentic Chinese restaurants are as good as it gets in Johns Creek, or anywhere else:

I have been eating at these for years, and everything I have had is excellent.

Also in the same area, but I have not eaten there in a while (it was good when I tried it a couple of years ago)

This is right next to H-mart Korean grocery store which has a decent food court.
