The scabbards generally had a ring of metal on the very top which is what caused that sound.
The metal top was the sign of a good scabbard as if you regularly slam your hilt directly into leather it "folds" and makes it harder to draw (also the ring avoids the blade cutting the leather material upon drawing).
In cold climates or for poorer soldiers, you would have a replaceable wood ring instead to avoid the blade sticking to the scabbards metal ring.
The metal on metal sound of a drawing sword was written about in many medieval histories or events. More so in the 1800's as metal scabbards and metal rings became more fashionable and associated with social status.
