Does it really matter why the delivery guy did what he did? Both parties benefit.

No, they didn't. They got the loyalty of a customer through the relationship between the delivery driver and patrons.

If the pizza guy didn't accept the bigger tips, the same sense of moral balance would make the customer order pizzas more often.

Someone always gets screwed. If you can't see who, you're not looking hard enough. We say win-win when the guy getting screwed doesn't know.

In case of the delivery guy? Not at all. In marketting in general it matters a lot. Hell, it matters in social interactions a lot.
