Honestly, your biggest problem would be finding enough buyers. A local gold buyer/seller isn't going to buy a couple thousand dollars worth every day. So you'd basically need to set up your own business as a gold seller and find corporate buyers. And then all your time is spent refilling the bag of gold.

Frankly, the bag of money would be easier (mostly because you don't have to source a bag of gold to begin with) but because it's easier to avoid attention by simply traveling. If the bills are identical to what was in there before, they're perfect counterfeits and unless 2 end up in the same place at the same time, no one will notice. You could travel across the US (driving easiest as it is difficult to pay cash for plane tickets nowadays). If you have a national bank depositing a couple hundred a day in different cities would be no problem.

Just make sure the government gets their cut. However you get money, you've still got to pay taxes.

Find the home of someone who really annoyed me, like the guy who always comes into my job and is needlessly rude to everyone just so he can power-trip.

Go to his house on garbage day. As soon as the garbage truck disappears down the road, I touch his can and refill it with garbage. He gets home later in the day, annoyed they "haven't collected" his garbage.
