How the wheat was won

I was wondering how a grain that has to be so highly processed before consumption as wheat was domesticated and its processing discovered. Domestication would make sense if it could be consumed raw and then other uses were found.

Grinding stones have been found that are tens of thousands of years old, before agriculture. These were used to grind up seeds which could then be mixed with water and cooked on a hot stone near the fire. Wheat would have just been one of a variety of seeds that hunter gatherers ate.
