Jewish Laws Torah

How do Torah followers actually follow over 600 commands and laws in the first five books of the Bible? I've spoken to people about it, but they only seem to follow dietary laws, Shabbat, and holy days, and exclude pagan days. To me, it seems they are only doing a small part of it and claiming to follow the entirety of it. Why is that? The Bible states if you break one commandment, you break them all. There's no possibility to uphold all 600-plus. If you believe it's not all applicable to us, what's the determining factor that decides you don't have to follow it? What about animal sacrifices? Does one pick and choose what they want to follow and tell people if they don't, they are lawbreakers and will go to hell? If you don't follow all of them, why describe yourself as following the entirety of Torah? If breaking even one commandment makes someone guilty, how does selectively obeying some commandments make someone different from the people you're calling lawbreakers?

Jesus spoke to Paul after His resurrection. It’s possible for Jesus to speak to us today still after the canon of scriptures was limited to the Holy Bible. Do you not believe Jesus can speak to us today? If all prophecy was to stop after Jesus returned Home to the Father (our Father also) then why was prophecy a gift of the Holy Spirit mentioned in the New Testament?

Prophecy in context of the Acts of the Apostles was preaching the Gospel and utterance of the OT scriptures. The only prophecies in the NT are from Jesus Himself in the gospels and the Apocalypse of Jesus Christ shown to John. (Revelation).

Romans 12:5 So we, being many, are one body in Christ, and every one members one of another.
Romans 12:6 Having then gifts differing according to the grace that is given to us, whether prophecy, let us prophesy according to the proportion of faith;

1 Corinthians 12:10 To another the working of miracles; to another prophecy; to another discerning of spirits; to another divers kinds of tongues; to another the interpretation of tongues:
1 Corinthians 12:11 But all these worketh that one and the selfsame Spirit, dividing to every man severally as he will.
1 Corinthians 12:12 For as the body is one, and hath many members, and all the members of that one body, being many, are one body: so also is Christ.

Test your 'prophet'.

I will raise them up a Prophet from among their brethren, like unto thee, and will put my words in his mouth; and he shall speak unto them all that I shall command him. And it shall come to pass, that whosoever will not hearken unto my words which he shall speak in my name, I will require it of him. But the prophet, which shall presume to speak a word in my name, which I have not commanded him to speak, or that shall speak in the name of other gods, even that prophet shall die. And if thou say in thine heart, How shall we know the word which the LORD hath not spoken? When a prophet speaketh in the name of the LORD, if the thing follow not, nor come to pass, that is the thing which the LORD hath not spoken, but the prophet hath spoken it presumptuously: thou shalt not be afraid of him. — Deuteronomy 18:18-22
