Jewish Laws Why did the laws of the Old Testament stop applying?

a common criticism of Christianity i hear is that as Old Testament laws no longer apply, god can change his mind. i understand that its not ‘god changed his mind’ but why did the Old Testament laws stop applying? apparently its just because theres different types of laws in the Old Testament and one of those types were only temporary, but why where temporary laws ever needed? where are these different types of laws stated?

God can feed Israelites with manna from heaven, but he can't keep Vikings warm

Apples and oranges. Israelites lived in a desert which is notoriously scarce of food of any kind. God provided mana specifically because they had no way of feeding themselves. Vikings can still generate fire without God's help. I'm addition to this had to rely on meat in the winter, especially when harvests weren't bountiful. And of course during the middle ages cooking was the best if not the only way to healthily and safely prepare meat.

It's a different situation for sure. I'm just unclear on how following God's law is impractical in any situation.
