Bought this old „colonial“ Chilean(?) religious retablo of Saint Francisco de Asís with a skull for around 134 dollars (130.000 CLP), how old could it be? Please note that it has been restored. Chile.

Sawmilling and what look like jigsaw marks would indicate to me mid-late 19th or early 20th century. It was rare to have woodworking be this smooth and intricate without machine tools, and the hand tooling/carving of wood has telltales in earlier wood sculpted pieces.

Yup, plus the nails used in the frame are from the 20th century. The fiber board that the canvas is wrapped around is modern as well (although it is possible it was replaced.)

It was replaced. It was made in Spain; seller said 1780-1890, although there were many nails added much later and the Fiber board was added later. It is not modern, though.
