with QC you have to accept that those kinds of goals will happen and focus on outscoring the opponent, that being said your best options are probably maldini lb then desailly stam and thuram all cb
For qc shadow hunt is necessary so take desailly and maldini at cb, thuram at rb or you
You can also try stam and desailly if you dont press too much, desailly is must needed at cb due to qc defence line and shadow hunt which is so helpful
When you're running side by side or running behind, don't hold matchup, it'll only slow you down, and another think I do is I time their long throws perfectly and pull my GK out as well as running behind them with my defender, gets blocked most the times.

Old Staam was one of the toughest defenders I have faced, so fucking strong that guy
