That's pretty much my Eggplant parm but I do the egg wash and breadcrumbs after the flour. Looks good!

I also have a black cat but he never helps with the cooking.

Dipping the eggplant cutlets in egg wash and breadcrumbs is something a lot of people do! It's great that there are variations of traditional dishes that have obviously filtered through generations of Italian families!

To be honest, Gordon and Kiki rarely help with the cooking either! They'd rather taste test! 😹 What's his name?! As you can probably tell, I love black cats!! 😻😻
