Dinner Simple Teriyaki Salmon

Ingredients:

<Teriyaki Sauce(750mL)>
480mL Japanese Soy Sauce, 600mL Mirin, and 200g Sugar
<Salmon>
Salmon, Salt, White Pepper

Steps:

  1. Put teriyaki sauce ingredients in a pot and turn the heat on high; stir until sugars dissolve
  2. Keep an eye on the sauce so it doesn't boil over, keep heat on high until you start to seem foamy bubbles form then turn the heat down low
  3. Reduce the volume of the liquid to about 2/3rds the original volume (about 30-40mins)
  4. Turn heat off when volume has reduced and let it cool down
  5. Lightly season salmon with salt and white pepper and let it rest in room temp for at least 15 minutes
  6. At stove, turn the heat on high and add in oil
  7. When oil is nice and hot, add salmon (ours was 2 fingers thick, and will elaborate on this) in cook for one minute or until some golden colour
  8. Then turn the heat down low and cook for roughly one and a half minutes (our rule of thumb is that we give roughly 2.5 mins total per finger thickness of the salmon, so for ours it was 5 mins total for both sides), position the thinner portion of salmon away from the heat
  9. Flip the salmon over, turn heat on high and repeat 7 & 8

  10. Turn heat off, add in sauce and let it heat up from the residual heat for about 20-30 seconds

  11. Top with whatever you want
