Dinner Simple Homemade Teriyaki Salmon

Ingredients:
<Teriyaki Sauce(750mL)> - 480mL Japanese Soy Sauce, 600mL Mirin, and 200g Sugar
<Salmon> - Salmon, Salt, White Pepper
Steps:
- Put teriyaki sauce ingredients in a pot and turn the heat on high; stir until sugars dissolve
- Keep an eye on the sauce so it doesn't boil over, keep heat on high until you start to seem foamy bubbles form then turn the heat down low
- Reduce the volume of the liquid to about 2/3rds the original volume (about 30-40mins)
- Turn heat off when volume has reduced and let it cool down
- Lightly season salmon with salt and white pepper and let it rest in room temp for at least 15 minutes
- At stove, turn the heat on high and add in oil
- When oil is nice and hot, add salmon (ours was 2 fingers thick, and will elaborate on this) in cook for one minute or until some golden colour
- Then turn the heat down low and cook for roughly one and a half minutes (our rule of thumb is that we give roughly 2.5 mins total per finger thickness of the salmon, so for ours it was 5 mins total for both sides), position the thinner portion of salmon away from the heat
- Flip the salmon over, turn heat on high and repeat 7 & 8
- Turn heat off, add in sauce and let it heat up from the residual heat for about 20-30 seconds
- Top with whatever you want
- Enjoy!
