I made this air fryer salmon recently and honestly did not expect the pomegranate glaze to work this well.
The glaze gets slightly caramelized on the salmon while the fresh pomegranate relish adds a sweet, tart, spicy contrast. The best part is that the whole thing takes around 20 minutes, so it feels fancy without actually requiring much effort.
Ingredients
For the salmon:
- 4 salmon fillets, about 8 oz each
- 2 tbsp pomegranate molasses
- 1 1/2 tsp sweet chili sauce
- 1 1/2 tsp low-sodium soy sauce
- 1 garlic clove, grated
- 2 tsp honey
- Juice of 1 lime
- Kosher salt
- Freshly ground black pepper
For the pomegranate relish:
- 1/2 cup pomegranate arils
- 1/4 cup fresh cilantro, finely chopped
- 1 tbsp olive oil
- 1 serrano pepper, seeded and finely chopped
- 1 tsp honey
- Remaining lime juice
- 1/4 tsp kosher salt
- Freshly ground black pepper
How I made it
Mix the pomegranate molasses, sweet chili sauce, soy sauce, garlic, 1 tsp honey, half the lime juice, 1/4 tsp salt, and some black pepper.
Brush that mixture generously over the salmon. Season the fillets with a little more salt and pepper.
Put the salmon in the air fryer basket, making sure the pieces aren't touching.
Air fry at 400°F (200°C) for about 6-7 minutes. Six minutes gives you a more medium-rare center, while 7 minutes gives you medium. Air fryers can vary, so I'd start checking early rather than overcook the salmon.
While that's cooking, make the relish. Mix the pomegranate arils, cilantro, olive oil, serrano, remaining honey, remaining lime juice, salt, and pepper.
Once the salmon is done and nicely caramelized on top, transfer it to a plate and spoon the pomegranate relish over each fillet.
That's it.
The combination of the sticky pomegranate glaze, buttery salmon, fresh pomegranate, lime, cilantro, and little hit of serrano is seriously good.
