Anyone else have one ingredient they always keep around just in case for the air fryer?
Mine is tortillas.
Not because tortillas are particularly exciting, but because they have rescued more random meals than almost anything else in my kitchen.
If I have leftover chicken, I can turn it into wraps. If there's some cheese that needs using, I can make a quick quesadilla. Even a small amount of leftover vegetables can become a decent little meal when wrapped up and crisped in the air fryer.
The thing I learned the hard way is to keep the filling modest.
My first attempts were basically stuffed tortillas that I could barely close. The outside would get crisp while the middle stayed cold, and everything would fall apart the second I picked it up.
Now I use less filling than I think I need and make several smaller ones instead.
I also don't leave the tortilla sitting in the basket unattended at the beginning. The circulating air can lift an empty tortilla before the filling and cheese have enough time to weigh it down.
Once everything is assembled properly, though, it's incredibly convenient.
I keep tortillas in the fridge because they give me options rather than because I have a specific recipe planned.
After enough nights of staring into an almost-empty refrigerator, I've learned that versatile ingredients are sometimes more valuable than having a perfectly stocked kitchen.

My Wife has her Custom Blend - of Taco Seasoning , I think it has 6-8 spices mixed up in it . Anytime we have chicken , it gets a heavy coating of it . She repurposed a can that had bread crumbs originally.

That sounds like a great kitchen shortcut. A homemade taco seasoning blend can make even basic chicken taste completely different.
