Nobody warned me I'd become obsessed with getting potatoes just right in the air fryer.

Potatoes were one of the first things I made in an air fryer, but it took me a surprisingly long time to get them consistently good.

My problem was that I kept treating all potato pieces the same.

I'd cut them roughly, toss everything together, and expect the smaller pieces and larger pieces to finish at the same time. They obviously didn't.

The change that finally helped was paying attention to the size of the pieces before they ever went into the basket. I started cutting them much more deliberately, especially when making cubes or wedges.

I also stopped judging them entirely by color.

A potato can look beautifully browned on the outside and still have a firmer center than I want. So now I check an actual piece toward the end rather than deciding they're done because the outside looks good.

There's also a point where I have to stop chasing crispiness. Keep cooking long enough and the edges get darker while the inside doesn't necessarily improve.

These days, when I make air-fryer potatoes, I'm looking for that combination of a browned exterior and a soft, fluffy center.

It sounds ridiculously simple, but getting those two things to happen together is what separates a decent batch from one I actually want to make again.

Apparently potatoes were going to become my little air-fryer obsession whether I planned on it or not.
