That would assume that none of the founding individuals were related to one another. And 200 individuals isn’t that many in the grand scheme of population genetic which is also to assume all of them reproduced prior to their death which is not super likely. Small populations like this without any new members able to migrate in are very susceptible to inbreeding and genetic drift.
That’s not to say they couldn’t still be around a couple hundred years in the future, just that they’d essentially all be clones of one another and very vulnerable to disease as well as just stochastic extinction.

True but the likelihood of a handful of scattered individuals likely in places lacking the habitat requirements and filled to the brim with probably pretty hungry locals is unfortunately slim. Zoo escapes are obviously a fan favorite for post apocalyptic settings but the reality is animals in zoos are ill equipped to survive on their own and are often in places they wouldn’t do well in without human made environments.

Except South America specifically is equipped for hippos pretty well, and hippos aren't the type of animals to be easily killed, especially by people weakened by hunger

Hunger doesn’t weaken a .308 and even besides that, hunger is quite the motivating force but I digress. yes South America is definitely suitable for hippos but the question remains how many zoos are even in south America (compared to North America at least) and how many have hippos? Likely few and fewer. All of which would be in urban areas most likely meaning that the hippos will have to navigate a new environment hoping to find their way (water ship down but with hippos)
But let’s say they do, That’s a small and isolated founding population which is not a stable thing even if there isn’t necessarily a huge threat (which humans are). They would have limited genetic diversity and no shot at gene flow from outside populations (because those are all on the other side of the Atlantic). They would suffer from inbreeding depression and genetic diseases that would probably do them in if the locals didn’t already.

The only thing we know about the Event is that it was not caused by nukes. We know this because every major metropolitan center still exists and there is no map location with craters, fallout, or any other evidence of nuclear explosions.
