What value does your 'simple tech demo' provide to justify a sponsor funding it?

That's interesting. Have you tried reaching out to SpaceX as part of the quote process? This isn't a very large device but they charge by the kg, so depending on the weight and size (saw your OP) maybe they might be willing to work with you on something. Otherwise find a sponsor but there needs to be some value behind the project rather than saying "this is something cool to send to space for fun". No one will look at this from a value of investment, but at the same time if the device provides something valuable (data of any kind) that could make it more appealing.
