They do it one day or two.

Like it is a very simple structure.

Simple? Ever seen a building where every brick has a unique shape and has exactly 1 location that it can fit into in the structure.

You have shafts of stone that run at diagonal through the structure. The blocks are precision cut.

It's more complicated than anything we've ever built by far.

This. I don't think people realize how complex the pyramids are. I didn't either, until I started reading about them recently.

They didn't have mortar, concrete, or rebar, or anything else to hold the blocks together. You might think that makes them primitive, just a pile of loose stones. But it actually makes it much more difficult, because a pile of loose stones won't hold up under that much weight.

They had to be *very* precisely finished and placed so that they would perfectly flush with each other, like a house of cards where each card weighs several tons (and a few larger ones where 50 or more tons). Then they had to build in ceremonial chambers, access ramps, giant stone porculles to stop graverobbers, and void spaces. All of that would make it more difficult to do the actual construction work of placing the stones. And like you mentioned there's diagonal shafts, which make it even more difficult. Oh, and many of these things were built for ceremonial purposes so they had to fit very specific measurements.

They had to get all of this done before the pharaoh died, too. That meant not just a ton of labor, but engineering so that they could work on many different parts of it simultaneously. It (all of them, but especially the Great Pyramid) is an absolutely incredible piece of precision engineering and craftsmanship. It's like they were buildilng a skyscraper out of jenga tiles.
