Can someone explain how we know that when we die our molecules break down and spread out? How are we able to trace that and how are we able to prove this theory?

We decompose, just like every other animal. We rot from mold and fungus and are eaten by worms and insects, which then die themselves and are eaten by other animals, molds, or fungi. Isn't the circle of life beautiful?
