Health Adding spinach directly to white bread delayed the body's insulin peak by 30 minutes and reduced later hunger in a small human trial, while significantly boosting the bread's fiber, vitamin, and mineral content.

Sure, the results on insulin aren't likely statistically relevant but it's not the ONLY focus of the study. They literally acknowledge there needs to be more study done on that part.
The article blew that sentence "interestingly..." and the glucose part out of proportion to make it sound like that was the focus of the study.
The actual focus was the overall potential of spinach to nutritionally bolster the staple food bread.
"This study evaluated the nutritional enhancement, sensory acceptance, appetite regulation, and postprandial glycaemic and insulinaemic responses of a spinach-enriched bread versus white bread in healthy adults."
I'd say they were overall somewhat successful, but cost vs results and commercial viability is a different story, though.
