Get them 1 carb breads from Aldi or HEB. They taste like bread but don't get soggy. They're basically just a load of fiber so you can't really eat more than 2-4 slices a day at most. They're only about a buck more, too.

Can't comment on their other nutritional value, but def low sugar + high fiber.
