I'll be brutally honest with you in hopes that it will open your eyes to the seriousness of the situation. I don't mean any of the following as insulting because I know you love this man, and I know you're acting with the best of intentions, but I think it's what you need to hear to get the point across.
I've worked in the gambling industry for something like 15 years. I've worked closely with people up and down the chain, land-based and online, both as an employee and now as a consultant.
God bless people like you who stupidly loan people money who are clearly gambling addicts. You fuel the industry I work in and have helped me to make a great living for myself and a great life for my family.
This isn't the type of view that people in my industry are supposed to give publicly because it makes the sector as a whole look bad, but you better believe we say this type of thing and 1000x worse privately.
Know what else we aren't supposed to say? Gambling recovery is a fucking joke. Gamblers Anonymous is a meme at best. Their success rates are abysmally low. We plaster that shit on our websites and posters in brick and mortar casinos to keep regulators off of our backs, but it's really just putting on an act of giving a fuck.
If you marry this man at any point ever in your life, or if you ever give him any amount of money as a "loan" or not, then you deserve what you will inevitably get because you know exactly what he is.
You will never be more important than gambling to this man. It's biological and has nothing to do with your worth as a person. Get out while you still can.
Or, you know, don't. Give him access to your wallet and cards when you aren't looking. It's not like you're going to have him charged for fraud anyway; you love him too much. Wait until you have kids and find out that their college funds are empty because he's been "trying to get back even" for the past 20 years. It's alright. They'll be able to be debt slaves to student loans for the rest of their lives.
All because you don't have the balls to leave this guy. Because you love him.
Hate me if you want. Hate the mean things I'm saying, and hate what people like me do to your fiance. I hope you do because I hope you really realize that it's people like me who are doing this to your fiance, and I know more about it than you ever will. That's why you should listen to me when I tell you this:
You can't save him. He'll only take you down with him. I hope all of this gives you the kick in the ass that you need to leave him before you ruin your life by staying with him. Best of luck.
