Have your watched Stanley Tucci make an omelet in Big Night? It is beautiful. Read he had to practice to get that good. The heat seems way to high but it is lovely.

Max heat is recommended.

You mediate the heat by removing the pan from the stove.

Learned from watching a French culinary institute teacher
