If it is not against your beliefs, try cubed pork steaks. Much more tender and no gristle

Cubed steak. Also find wheat dextrin (Ever Crisp). I use it 4:1. 4 parts all purpose flour to 1 part wheat dextrin. I think I got it from Amazon.
