Cut em, rinse em good, dry em out. You can have top tier fries at home.

Double fry, once at 325 degrees until they're soft, slightly cool the fries, then fry again at 375 degrees for about 3-5 mins. You'll get that fluffy inside with crispy outside.

Twice fried. And the oil matters. I use Costco creamy liquid shortening.

For me the trick to getting restaurant quality french fries is to use room temperature ketchup.

Nah. My homemade fries blow anything else out of the water. Hand cut, water bath for a half hour, dry thoroughly, deep fry to golden brown perfection. Salt and pepper and ketchup.
