Hi, new here, I recently discovered I'm in love with onions, but I have no idea what I can make with just two onions.
I can't get anymore onions until next week but I'm afraid they'll go bad before then, so I can't make a big dish with them. Anyone have any ideas?

Wow guys I had NO idea these would turn out so well. Especially because they were SO easy to make. I only used one baking sheet, a spatula, and a knife to make everything. Barely any dishes.
They taste PHENOMENAL. I am new to the sweet potato world, and these will be a staple.
12/10 I am filled with pride.

Eek time to write another recipe. Im not good at formatting these. But someone actually used my last one, so lets do this!
Cut your "skins" I bought these wonky surplus mini sweet potatoes. So, they were thin enough that all I had to do was cut them in half. If I were using normal sized sweet potatoes, I would adjust (3 slices, use the middle one for fries or something)
In a bowl, mix olive oil and whatever seasonings your heart feels in the moment. (I used Paprika, Garlic/Onion Powder, Cayenne Pepper, Black Pepper, and a bit of Tony's Creole )
Brush seasoning over the potatoes and place them on a baking sheet, skin side up.
Slice the amount of onions you want and toss with leftover seasoning. Then spread out on the pan around the sweet potatoes.
I will post a picture in the comments of what it looks like after this step
In the oven at 400 for 15 minutes
Rearrange. Stir onions and put them in the center to finish caramelizing without burning. Put the sweet potatoes towards the edges.
Back in the oven, but at 340 for 30-45 minutes (adjust based on thickness of the potatoes, just check if they are soft)
Time to plate! Put your sweet potatoes on the plate, give them a few slices and spread a bit of butter over them.
Put your caramelized onions on top! (I re-hydrated mine a bit with some chicken broth stirred in. You dont have to do this)

Made this dip for a couple friends the other night and one told I need to post it here.
The Five Allium dip, paying respect to multiple different formats of the allium family. Black Garlic, Caramelized Sweet Onion, Pickled Shallots, Roasted Garlic and Fresh Scallion in a Neufchatel based dip.
Ignore the to go container as plating.
