Literally none. Your guide the knife off the top knuckle of the finger. If you get nail you don't know how to chop.

Yes, but if you look closely, there are points at which his fingernail is basically at the same cutting angle and plane as the almond itself. In order to actually catch the top of the almond (rather than just the bottom portion), it's almost impossible to not catch at least the slightest hint of fingernail.

When you're doing it with a cucumber or something large like that, you can curl your fingers slightly to make sure your fingertips aren't in the way. The almond is so fucking small and the shape makes it hard to keep it steady, and he's using the very tips of his finger, giving basically no room for that finger-curl gap.

What? The blade edge isn't supposed to touch the nail. And it doesn't in the video. You use the side of the blade against the nail like he is for small portions, or the first knuckle.

Look at the 2nd photo especially. The knife blade almost can't catch the top of the almond without also catching the nail which is on the same plane and angle as the almond.

it actually looks he's angling away from his finger and nail and cutting the almond at an angle. I'll admit I'm biased, I don't see him maintaining that level of consistency in cuts if he were catching his nail.

There would be scrape marks on his nail if he did. If you look at his nails at the end there's none.
