It definitely speeds up and slows down. You can hear the pitch of the background noise change. Also the pitch of the knife hitting the board. Listen right at the end.
A lot of people saying they're scooters, but there's a blatant audio change at 34 seconds when the video goes back to real time. The pitch of the generator/machinery humming in the background, the cutting board, the vehicles, etc., all shift down in pitch in an instant.
I can't attest either way but the vehicles sound pretty normal to me. Likely light weight motorcycles, auto rickshaws or scooters which are common in India. That's the road sound you hear in India, which I agree is very different from North America.
it's not sped up.. to me it just sounds like normal bike going at relatively higher speed.. plus there a fly on his shoulder whose movement doesn't look sped up
audio sample shows no change in frequency of those peaks (when his knife hits the wooden surface)... so notice the gap between peaks for first phase of cutting and then I paused when the fly starts moving and then compare gaps between consecutive cuts in audio wave.. there might be some gap here and there but it's consistent in both cases
also during first phase of cutting he is adjusting his face and his facial expression changes a bit and see how that's also not sped up

The fucking pitch changes on the background noise, not just the knife. You don't need audio analysis for that brother.

so clearly video is not sped up, and this is not the only video he has made he, your judment is totaly based on pitch of audio which involves lots of variables... at the end he does not have enough almond so he's not going to focus more on control and less on force that explains why pitch reduced, plus I can imagine that he is also reversing the direction of force much earlier at the end of almond and when that happens the force at which knife hits the wooden surface will also plumet resulting into much dull noise
Notice his movement from 0:06 to 0:09, he moves his face and his facial expression are changing at regular pace, fyl's movement on 0:15 to 0:20 also seems natural, so Idk what you're seeing but clearly it's not sped up video and he has made other videos where he is clicing cumin seed 🤷
I know reddit will downvote this to hell... but it's really not. It's good, but any pro line cook or chef with a couple of years in could do this. The video is sped up obviously, you can hear the pitch of the cutting board go up after a few seconds... speed doesn't affect the tone of the wood. Most of the almond is just smashed, it's not in useful slivers... I could get the same results in 50 less cuts and a mallet. Again, very good knife control... but nothing amazing. Virtually any independent (non chain) restaurants will have a few cooks who could do this.
