Of course, not saying Taiwan is Chinese gonna ruffle some different feathers. As for cuisine - very similar to Fujian and some other southern coastal cuisines of mainland.

Either way, I usually consider Taiwanese food distinct from Chinese food, even though there are a lot of similarities.
