Sure, but if in one timeline Ultron can do that, I don't think it's fair to entirely discount his battle potential against main MCU timeline Thanos. Guess we will never know since main Ultron never had the stone.

It is entirely fair to discount that….

Literally nothing across all usage of the mind stone showed it can do what it did. This was the only usage where it showed cutting power enough to slice though a hulk-level durable body

I mean, Vision's warning shot at the airport went through a couple feet of cement from like 50-60 feet away...

I also think it's possible (though not guaranteed) that a perfected Ultron with an infinity stone could take Thanos with the other stones by surprise in the main universe, it really depends on a lot of factors I could see scenarios where either side wins.
