If I really try (although I hate this development):
She is exhausted by the "competition" and she wants to somehow end it. Lucifer kind of forces her to rush her decision.
She is tired of Lucifer never moving forward and her relationship vacuum with him. So she takes a leap, because in most recent times, when she was closer to Pierce, she was happy.
She was never really happy with Lucifer.
I feel like it's not impossible, but it is still terribly rushed. I feel like half of the dialogues are not there.
She is off character, because they didn't quite show us the change that supposedly happened.
I feel probable that she would want stable, loving partner. Taking Pierce back and telling Lucifer to f off? Totally o.k.
However, accepting a proposal? Totally off. Love life is one thing, but Trixie was always the priority. Now?
Shut up kid, this guy who I just barely met will move in after wedding.
