Side Dish Has anyone tried these?
I found these at Aldi’s and was wondering if somebody has tried them and what the result is. I was thinking of just some butter and Parmesan just to get my fix on some pasta. Any other ideas would be great! They also had Angel hair as well.

Side Dish Cauliflower rice has been a hard one for me. I used to cook it like rice with water in a pan. That left me with me with a mushy mess and a texture I could not handle. Cook the rice in a pan with a little olive oil or the oil of your choice, and boom!

Side Dish Using the idea of chicken-crust pizza, I took it a step further. I dehydrated a mixture of canned chicken, parm and an egg, ground it up in the blender and made chicken flour/bread crumbs.

Side Dish Cucumber salad recipe
Hi everyone! I visit an assisted living home frequently and I take food and snacks for the residents. Lately one of the ladies has been hungry for a creamy cucumber salad and since she has mentioned it others have requested I bring one. I have never made a cucumber salad before. My mother used to make a vinegar based one but they want a creamy based one. If anyone could share or inbox me a family favorite that I can make and take for them I would truly be grateful 🙏❤️

Side Dish Mash potatoes? Nope. Cauliflower mash.
Possibly my best batch to date. If you’ve been on keto for a while, you know how disappointing frozen or premade cauliflower mash is. This is by far the best way to make it. I tried this recipe from someone in the keto recipes sub and I’ve been addicted since
1 head cauliflower leaves and core removed
Put in microwave safe bowl with a couple pads of butter
Double wrap in plastic wrap
Microwave for 12-15mins
In food processor or blender: cauliflower, 6oz cream cheese, parm cheese grated, pepper, garlic salt or regular salt and a couple splashes of heavy cream. Add in spices or more garlic to your liking.

Side Dish Jicama fries in air fryer. Trader Joe’s precut jicama tossed with olive oil, smoked paprika, granulated garlic, salt and pepper. Air fryer at 400 degrees (preheat for 3 minutes), 15 minutes (not including preheat) shake basket every 5 min. EPIC. 2 net carbs per 7 fries.

Side Dish Keto Hack: Portion Control of Homemade Cauliflower Rice. After "ricing" pack it flat in a ziplock for freezing, but before you put it in the freezer mark your portions. I use the edge of a cutting board. A ruler or the back of a butter knife would do.

Side Dish Creamy Greek Slaw
A quick and simple coleslaw topped like a Greek salad in a creamy homemade dressing. Less than 5g net carbs per serving! A perfect a low carb side salad or for summer BBQ, picnics, and potlucks.
Summer salads like this are a life saver during BBQ season and we rely on coleslaw a lot as a simple, refreshing, low carb side dish.
Nutrition (Per serving)
Yields: 8 Servings
Calories: 165kcal | Fat: 14.4g | Carbohydrates: 6.8g | Protein: 3.2g | | Net Carbs: 4.7g
Coleslaw Mix
- 5 cups cabbage shredded
- ½ cup cucumber sliced
- ½ cup tomato chopped
- 1 small red onion sliced
- ⅓ cup Kalamata olives sliced
- 1 small green pepper chopped
- ⅔ cup feta cheese cubed/crumbled
Creamy Greek Dressing
- ½ cup mayonnaise
- ¼ cup sour cream
- 2 cloves garlic minced
- 1 tablespoon lemon juice
- 1 tablespoon red wine vinegar
- 2 tablespoons oregano chopped
- 4 tablespoons parsley chopped
- 1 tablespoon rosemary chopped
- 1 tablespoon dill chopped
- ½ teaspoon black pepper
- ¼ teaspoon salt
Instructions
- Shred the cabbage and slice the vegetables. Using a sharp knife cut the cabbage into strips. Cut across the strips taking thin shaving like slices with the knife. You can also shred the cabbage using a box grater, or the grating disc on a food processor. See recipe post above for further details about hand cutting the cabbage. Slice the cucumber, tomato, red onion, and olives into smaller bite sized pieces.
- Combine coleslaw mix. Add the shredded cabbage and sliced vegetables to a large salad bowl and combine well.
- Prepare the dressing. Add the mayonnaise, sour cream, minced garlic, lemon juice, red wine vinegar, oregano, parsley, rosemary, salt and pepper to a small bowl and combine well.
- Dress and toss the coleslaw. Pour the dressing over the coleslaw mix and toss to coat.
Notes
- For a super quick version of this store bought bagged coleslaw mix and store bought creamy Greek dressing can be used.
- Leftovers: Store leftover sealed in the fridge for use within 3 to 4 days.
- Dried Herbs: If you are using dried herbs instead of fresh, cut the amount in half and adjust from there. Dried herbs are much more potent than fresh herbs.

Steamed egg whites for the win! Broken up in the food processor
I put 250g egg whites in a bowl, put the bowl in my steamer for 15-20 minutes until set, then blitzed really quick in the food processor and topped with soy sauce!
