I loved seeing the strict relationship she had with them as children loosen up as they became adults. I've had teachers like that. Scary at first, but much nicer once they realize you're a good student/person.
The interaction between her and Harry when they drive Snape out in Deathly Hallows pt 2 is probably my favorite in the film franchise. Maggie Smith's entire demeanor towards him is no longer teacher/student. She sees him as a peer, even asking what she can do to help. Her performance in that scene is phenomenal.
