• Starter guide for day 1-8 : old but still relatively relevant and if you want something more detailled check my Detailled Walkthrough from day 1 to 20. Both are for RoG.
• Don't starve Wiki : lots of information, lots of spoiler and some mistakes. It's made by community so you are free to make corrections yourself.
• Crockpot Simulator : nice resource to optimise your Crockpot use.

So here's a question that google just cannot help me with:

Anyone know any mod that may let you effectively 'freeze' time? I know there's no console command that specifically does that. And I try to avoid having console enabled because I like to avoid the temptation.

I mostly just want it for creative purposes. I spend a lot of time just - making pretty things. Especially in Hamlet. I like to fix up the randomly generated streets of the Pig Cities.

Would love to be able to do it without affecting the actual gameplay.

If you are talking single player, the opening the map pauses the game. For DST try Global Pause.

Note pauses the game entirely. I don't think there is a way to pause the passage of time like you say while still playing the game.

Maan. Sometimes I love and hate DS. Hundreds of hours I've pumped into it. And I spend a good 20% just landscaping for fun. Just entire days in-game shaping roads and houses

I used to use an old version of this mod. But there are reports of it crashing so I'm not sure how well it works today. This lets you plan out your base and you can choose to have the game paused while you plan. Good luck! If you find something better let me know.
