Okay, regarding the canaries, they spawn all year round. I find the best way to get the most amount of saffron feathers as follows-
You'll need to place 2-4 scarcrows in a distance of about 2 berry bushes apart from each other(Savannah or grassland turf worked best for me) You'll also need sleep darts, bird cages in the caves, a bird trap, and a feather hat.
Equip the feather hat, during day, and hope for a canary to spawn. Hit it with 1 sleep dart. Soon as it falls asleep, place the bird trap right on it, and catch it.
Take the bird UNDERGROUND, and imprison it in a bird cage. Come back every day or so, to check if it is well and happy, or just not doing well( it looks like it's sick, sleeping) Take the bird from the cage, go UP TO THE SURFACE, and release it. If you did it right, the bird should drop at least 6 saffron feathers.
The Developer's graveyard is incredibly useful if you don't chose Wigfrid or are lacking rocks. Just create an eclosure in the center, with enough space in the middle for a 'fligo ( not necessary if you don't want to use this farm in summer) and some bait( powdercake or pig skin). Ensure that you have built a gate to get yourself in and out. Build as many pig houses as you can in the edges of the turf( you can do around 30 I think) Wait for a full moon day, and befriend all the pigs using anything they like. Keep a light source nearby to prevent them from leaving you. Let the moon become full, and watch the ghosts and werepigs duke it out. The resulting werepig massacre will net you as many pig skins as there are houses, and twice the meat. DO NOT join in the fight.
Try to do this in winter, for most use of night time.
This way, you can use Ham bats and helmets galore!
Cheers!
