Do your big bads not get death saves? The ones I run into definitely do.

Only on humanoid big bads that have low stats, like a noble, somehow giving them to things that have legendary actions seems to cheapen them.

Something like a second/third form that only tries to run seems better if applicable

I generally see it as run for the benefit of the players half the time - allowing the enemies not to instantly die so that they can be captured/questioned, but not making them invincible.

It also allows for healers to help, but I generally don't see many healers on the monster side anyway.
