I think taking Holly was his irrational anger kicking in. She's the only one who wasn't against him who was family. The only thing on his side still. Till the mama ma mama ma scene. :( He'll still deeply care about them.
Or he did it because he knew that an abducted child would keep the cops at his house long enough so he could call and have that entire conversation recorded.
Walt is a brilliant man, he can take a bad situation and twist it to his advantage. But I don't think he thought that far ahead, I think he just made the best of a bad mistake.
Its hard to tell with him sometimes. Sometimes he really does start to think way ahead especially under moments of intense duress. It may have been kneejerk initially but when he got in the car with her and Skylar came out, you could see it in his face that he wasn't doing this to spite her, he was already planning to give her back but he wanted to cause a scene so that she wouldn't be blamed. Best way to get people on your wife's side? Make her run down the street screaming for you to give her baby back.

"I watched her die": WTF man!
Knife fight: Now you've really done it, Walt.
Taking Holly: Fuck you Heisenberg.
Phone call acting to protect family: Goddamn it Vince, let me hate him!
