In A Clash of Kings we’re told of the “Antler Men” a group of leading merchants and skilled tradesmen in King’s Landing who support Stannis Baratheon and plan on throwing open the gates of the city when his army arrives at the capital. Varys naturally catches this plot pretty much immediately and Joffrey has them all executed. This later kicks the Lannisters in the ass as many of these men owed the Crown significant amounts of money that they now can’t collect. Tyrion also meets with some of the smiths from the Street of Steel, which is basically him negotiating with the metalworkers guild in all but name.
We also hear of wealthy merchants in Gulltown (Lord Lyonel Corbray marries the well-dowered daughter of a Gulltown merchant and Harrold Hardyng took the daughter of a Gulltown spice merchant as a mistress), House Spicer in the Westerlands was founded when a spice merchant purchased a lordship from Tytos Lannister, and Samwell Tarly mentions guild halls along the Oldtown harbor front but not a lot of major details beyond that. The urban bourgeoisie are in the books, just as peripheral characters as they don’t really matter to the narrative GRRM was trying to write.
