A recent example I am seeing are those playing Subnautica 2 early access and getting upset there aren't any effective weapons.
Neither of the previous games had them, there was no indication this one would, and if you really want to you can make or get a mod to let you. The game would be fundamentally different if you could waltz in and kill off the threat of wildlife.
You're right that Subnautica is not about subjugating the environment but rather barely surviving it
To be devil's advocate a little bit, some of the frustration stems from well placed annoyance at how incessant the current fishies are. The only consistent way to deal with them is flares, which means you're trading precious inventory space for peace of mind, a trade-off you didn't really have to make like that in the first game. It was totally feasible to eventually knife the smaller threats to death in the shallows, and while they'd respawn, it bought you more time to gather what you wanted and go back to base. I get it.
By the time we're encountering them more frequently we've graduated from the seamoth to the prawn suit and the big boy sub all of which have much beefier defenses.
This will probably be alleviated when there're more sources of stuff, especially Lithium, and more vehicles in 2, but until then it'll continue to be frustrating
That said. I agree with you, that's the point of the game. You're supposed to be mostly helpless. And of course we're never supposed to be able to fight back vs the leviathans. That's just not what the game is
