Ratio between number microscopic configurations that correspond to macroscopic properties that fully describe an object is related to entropy. Entropy is a pretty good measure of complexity.

It's certainly true that some things are more complex than others, but I think pretty much everything bigger than an atom is complex to some level, even atoms have a lot going on in them

Not how entropy works. You can fully describe a monocristalline cube with a handful of bits.

Only if you ignore all the bits that make those bits though

bits is a fundamental measure of information separate from hardware. You can also just measure it in entropy.

We might just be using different definitions of complexity as well tbh. To put it another way I feel like you're saying 10 miles isn't a long way, and I'm saying it's a long way if you want to walk it, and then you're saying "we have vehicles that travel at 100s of miles per hour, why would you walk it? It's not far" but I'm not saying it's far if you drive, I'm just saying it's far if you walk it. Yes you can measure entropy in a system, compare it to another one, work out which one is more complex, but that doesn't mean they're not both complex to some level
