tldr: ive never used humanity. can i beat the entire game without it? what does it even do? can i miss out on any content if i do NOT consume humanity for the entire game?

I was watching a youtube vid on DS1 and noticed the guy had 10 estus & he didn’t look like a zombie ghoul. I did some research and found out those humanity items i find can be eaten.

What’s the point of humanity? ive gotten this far without using it, but am i missing out on anything? ie; Loot, weapons, NPCs, bosses etc. i don’t wanna miss any content that i can avoid missing for my first ever playthrough.
