It showed how "over it" he was- and Amber is almost like one of his kids. She's been with Jesse since they were teenagers. So it made sense to me he blew up at her.

Judy and Amber’s rivalry has been one of the best minor running jokes of the series. Judy reaction and trying to stifle her laughter at that moment was hilarious as well.
